Magnums for Dave (Jean-Georges - New York, NY): From magnum. Dark fruit with some good meaty spice on the nose. Still quite primary for its age with good density and power. But this didn't show much complexity near the end, and only had a moderate length.
A bottle of totally unknown provenance. Amber colour. The nose is initially quite mute. Fully, and probably over-mature. Tertiary flavours, quite earthy, truffley, with smoky bacon. With time and air it takes on more weight and power - it takes at least two hours to reach the sweet spot. The finish is warm, suggesting it is being sustained by the alcohol, while the fruit is fading. Having said all that, it's still delicious, but drink up.
