Casual Dinner (Giant Garouper, Serangoon Road): Perhaps an off-bottle so shall refrain from rating. Color was bricking and the nose spoke of an aged Bordeaux from a weaker vintage with secondary Cab Sauv aromas. Imagine a surprise when it turned out to be a fairly young Burg. With some air, the 04 greenness became more prominent but still this distinctively feels like its on the way down. I've had other bricking 04s before too so definitely a cause for concern.

Yikes, puckery, lemony-acidic. Some very faint floral cherry fruit and not showing much else. But a fairly generous and primary black cherry nose though. Shutdown city. Day 2: nose continues to develop, it's downright effusive at this point with black cherry liqueur, forest floor, crushed rocks and more. On the palate though it's still very tart and lemony, but it's revealing a little more than last night.... underripe strawberry, slightly herbal but with some nice earth and midpalate richness...impressive length though and clearly quite concentrated. Day 3: nose similar to day 2, with a little less effusive fruit, and some animale/funk. Palate is still very tart, with barely-ripe alpine strawberry. but a little more integrated and less lemony. Finally shows a little fruit sweetness on the midpalate. Overall though not substantially better than day 2. Day 4: gorgeous nose, and the palate is finally popping, with strawberry-lemonade, truffle, earth, very pure and delicious, full midpalate, nice length. This is the first day i would call this delicious. Indeed the one generous glass remaining was slurped down in short order.
Overall i suspect that this is always going to be an acidic and slightly lean wine. But i have no concerns about flavor development.
