  Dubois-Caron Brut -NV. Probably degorged 2011. Golden yellow colour with a mature nose showing some 'funkiness' with mature apples mixed with mushrooms and citrus. A soft and smooth taste of mature red apples and some length showing a mixture of citrus and apple tones. For a standard non-vintage champagne it has had some nice cellar development! But it's best only with 2-4 years extra cellaring.
