(Mostly) Oregon Dinner at Cherry Circle Room (Chicago, IL): Quite consistent with my last bottle -- this is a grapefruity, and quite austere bottle of bubbly, with bracing acids (which seemed to show more prominently than last time) and a huge dose of steely minerality to boot. Lovely and exciting stuff, which did get better with air. Which, just for the sake of curiosity, begs the question, how would this age under a crown cap...?

What fun! Slightly pink in colour. The nose has a lovely whiff of grapefruit, as well as a little bit of stone fruit. The palate is a little bit simple -- this doesn't have the gravitas of a champagne, but there's plenty to like still. A slight bit of bitter grapefruit on the back end, as well as some real crisp minerality. The acid doesn't seem as prevalent here, but make no mistake -- this is not a soft or round bottle of bubbly at all!

Been looking forward to trying these after going nuts over Michael's Ultramarine stuff. Lovely bottles, pop cap. Pinkish salmon color, Very fine bead. Opens with a mean streak of clean-your-palate-dry acid and bright red fruit. Strawberry and melon flavors in a taught wiry package. With air it begins to show an almost gamey-savory note.
