Started out a bit simple, but an hour or two of air really had this going. There’s more of a yellow flower note on the nose than classic sea spray, but the palate more than makes up for that, with nicely medium depth fruit, adding a blend of saline and chalky minerality that strengthens into the medium long finish. A very classic and enjoyable Chablis!

Limpid color. Lemony, brothy nose. Not quite as large scaled as the Montee de Tonnerre, but finer and more precise with rising back end acidity and minerality, and real Chablis oyster shell quality. A truly excellent Clos if not at the absolute peak of what this vineyard can produce.

Romain Collet Chablis (SF Wine Trading Company): Beautiful olfactory mix of flowers, citrus, and iodine. This too has a hint of creaminess, but the wood seems more delicately applied, and the wine comes across as more airy and lively than the Valmur. Bitter orange flavors and excellent acidity. Very classy juice. Not powerful like the Valmur but fine, subtle, and won't take forever to enjoy.
