  Sur des ris de veau
  Benji : Nez légèrement grillé, herbes aromatiques, d’une grande complexité, viande blanche.La bouche est d’une puissance contenue et finit en finesse sans amertume, en dentelle (de Montmirail of course).Excellent

  Nez complexe, baroque, opulent, prometteur.
  En bouche, cette complexité est parfaitement maitrisée par de beaux amers. Superbe bouteille, et superbe accord.
  Phil : Là, c'est du sérieux, du puissant, du complexe. Me rappelle le Chave blanc 1999 servi en début de mois chez Thien, mais dans un registre différent.
  Nez baroque, magnifique, l'archétype du nez complexe, évoluant au fil des minutes.
  La bouche n'est pas aussi droite que le Chave, mais l'équilibre est porté par des amers très nobles et fins. L'accord est parfait, un ange passe. Totalement jouissif

  darkish but no oxidation. needed time and developed into good, mature feeling white with intensity but low acidity levels. Powerful.

  Less influenced of age than previous bottles. Even less acidity than i remembered, but this wine has worked well for me with difficult disches, such as e.g. slightly salted cod in tomato sauce and salted and smoked meat and salisas with rootfruits.

  Very dark yellow, almost brownish. Unfamiliar smell in the direction of very ripe oranges, wood and marzipan. Full bodied and mature, with high acid and a strange and slightly unpleasant bitterness on the palate. A new and interesting experience.
