I opened this at 2 pm on Sunday, decanted and enjoyed for dinner at 6pm. Damp forest floor nose like a Bordeaux. Minerality and fully resolved tannins support delicious red fruit notes of raspberry and red currants. A wonderful vibrancy persists for half a minute to almost a full minute, somewhere between subtle and strong, but very pleasant. This was very enjoyable with sauteed lamb shoulder chops which were marinated in a mint-garlic-rosemary olive oil marinade. Chave syrah is as good as it gets. Addendum on Monday : the wine was still very good the next day at noon with the lamb. But to my surprise 8 hours later it had just died. Regardless I am keeping the high score since it was so massive yet delicious and well structured after 8 hours open and even after 22 hours. Suggests it would have been better to open at noon and drink till midnight!

One-word description is ‘wild.’ On PnP, it was muted on the nose but the palate was like getting slapped with a big slab of cooked bacon. After 30 minutes, concentrated black licorice, olive, herbal, plum notes come out. Very long finish. The wine has a coarser, leaner texture than modern Chave vintages, but in a pleasant old school way that contrasts nicely with the intense concentration of flavors hitting your senses. Overall really enjoyed this.

Absolute perfection tonight. The complexity of the bouquet is off the charts - developed, undergrowth intense hung game, raspberry, minerals. The mouth feel has a similarly extraordinary level of complexity and a multi-dimensional layered quality that is seldom matched. So long, so complete. A wine of balance and subtlety, that offered something new each time it is examined. A profound experience, and perfection at the dinner table with a Vongerichten recipe for Braised Short Ribs with Chinese flavours. As Gerard Chave once told me, hold this as long as you want...

From magnum. Stunning wine. This is quintessential northern rhone, with grilled meat, olives, red and black fruit on the nose and the palate. Powerful wine, with very long persistence and high complexity. This makes you stop and contemplate.

(Chave Hermitage) Really nice aromas of mint, dried leaves, olives, blueberries and a touch of alchohol. Palate was a bit closed but you could tell there was alot of stuff there but hiding. Check back in five years.
