With washed rind cheese, it tends towards showing drying acidity with a pleasantly oily mouthfeel and good persistence but poor flavor intensity. With a piece of salami, it begins firing on all cylinders with flavors of mandarin orange and green pineapple, with blazing, focused acidity but shortens up on the backend.
Highly food-dependent. Didn't show as well tonight as it did in the tasting room. Well-structured and may improve over time, but for now it is "very good," 87/100.

Honeymoon in the Finger Lakes; 10/17/2016-10/20/2016 (FLX, New York, USA): Tasted at the winery. Not sure if it is "dry" per the 1.3% RS, but close enough. Similar to the reserve Riesling with cleaner, more intense peach flavors and a tongue tingling acidity on the midpalate. Better length. "Very good," 89/100.
