A little upgrade on the second day (had evolved under Coravin) because the flavour and character had intensified replacing the more earthy dry flavour from the prior day. Very dark fruit. Blackcurrants meeting dark cherry and olive, liquorice and char. Perhaps even deserves another point as I found myself really drawn to drinking it.

Dark fresh colour. Quite sweet almost a cherry kirsch on the nose. Taste is dry and medium weight. Fruit is a little muted and very dark - very dark cherry came most to mind. Earthy and a touch of olive in the finish. Very balanced, Very pleasant but for me lacked a certain something - perhaps fruit, depth and real character. Unsure how this develops - it didn’t allude to hidden greatest to me.

Dark in color, here the grapes are always 100% destemmed. Made from a blend of 70% Grenache, 10% Syrah, 10% Mourvedre and 10% Cinsaut, the wine is spicy, fresh and bright with earthy, crisp berries, and an overtone of kirsch with a hint of smoke in the finish and on the nose. There is a round, luscious character to the wine that carries through to the dark cherry, thyme and olive finish.

Already a very nice wine, though should keep for a couple of more years before drinking more. Had to try it anyway to see how it is doing.
