This wine needs air - do not use a chianti glass for this wine. Use a cab/bordeaux stem. Chianti glasses stiffles the wine. Wine was deep hue of purple only slight browning on edges. Soft and silky mouth feel, and wonderfull flavors of ripe cherries and cocoa. Well balanced.

Fully mature - still decant 1 hour and serve at room temp. Ate with lamb ragu and pasta. Light and astringent on opening, as it warmed and aired it developed a silky texture and well balance finish. Tart red fruit is first sensation, flavors or strawberry and clove with a touch of vanilla. Finish is surprisingly long.
Had a glass after one day, better than day one. Flavors intensified and picked up a little more weight. A little heat but still very nice - drink now.
Day 3 - heat gone, silky textures and nice fruit. Incredible paring with dark chocolate, brought out intense cooked cherry flavors

anita: opaque dark purple; huge, giant oak bomb, w/dark tobacco leaves, earth, cassis, and hint plums. Has a swt kick--too rich, and not my style. Well made, tho. W/S’s family and vietnamese.

Consistent notes with prior tastings. This is a very good California expression of Sangiovese
