Jerez vs Jura: Quite a fresh nose of apricots and dried fruits as well as mushrooms and something reminiscent of animals. Clean, long taste, not as round as all the previous wines in the tasting. This also seemed to have higher accidity. This also develops sweetness of caramel aromatically reminiscent of old champagne.
