  • Just lovely. The other reviews are good descriptions, I'd only add that I found the weight/mouth feel very appealing with a nice creaminess to add to the fruit and other notes.

    What do you do when you only grow Grand Cru Chardonnay but what to make rosé? Well you trade a little bit for Grand Cru Pinot of course. Olivier Bonville was able to trade with Ambonnay celebrity-producer Paul Dethune for the red wine that goes into this blend of 92% Chardonnay and 8% Pinot Noir. Think Grand Cru Blanc de Blanc turned into a rosé!

This delicious example, composed of 90% Chardonnay and 10% Pinot Noir, is salmon pink in appearance with a persistent mousse of tiny bubbles. It exhibits aromas and flavors of fresh red berries – namely strawberry, alongside subtle notes of brioche, floral perfume, and spice. This is the type of champagne I personally enjoy serving with Sunday brunch – think smoked salmon, fruit salad, or crab cake eggs Benedict. The wine’s beautiful texture, firm acids, and reasonable price point (I found it for $30), make it an excellent option for any occasion and a wide variety of foods. Region: Champagne, France.
