One of the best finos I've had--stunning; darker color, with saline notes, very dry, conentrated for a fino, almost amontillado-like; marcona almonds in oil, salty, green olives, nutty, long, pure, crazy good.

Deep golden colour. Nutty complex nose and a very elegant, pungent and intense flavor with great minerality almost salty very long finish. Great! The bottle was labeled N° 229 and L-3518.
It works exceptional well with smoked salmon and with salads that contains fresh onions. I found it always very difficult to pair the latter with wine. But this sherry managed it.
If you can't consume one bottle of old fino on one day, don't worry. At least this fino improves in the opened bottle until day five after opening.

Valencisco Vertical Tasting (Enoteca Barolo - Madrid): Served by the glass just trying to pair some eel balls at restaurant La Cabra. Despite still it's a solid Fino, I founded Panesa is loosing its initial attractive showing short yet effective mouthfeel. By the way, it wasn't a loyal mate for that food...

A pesar de que todavía es un Fino consistente, encontré que Panesa está perdiendo su atractivo inicial mostrándose corto en boca aunque efectivo. A propósito, no fue un buen compañero para esa comida...
