Improved greatly after a couple of weeks under cork, half btl, half full. Dreadfully simple at the get-go, but worth waiting for!
Nose: A baryton on the nose, sending subliminal msgs of a very mature and interesting Fino. Not at all big, but complex with hints of dried flowers and meat balls → meatballs over vegetal aromas towards soft, mild and new green weeds. Palate: Now, we're talking! The first timid sip of the evening was close to a wow. Mellow acids for what it is. Has a very fine, nutty, oxidized personality that is somewhat simple. Peppery towards chervil. Great length, superbly balanced, intense and medium bodied, elegant, dry sherry. This delivers what it should, and then some. Youthful in style, and at a quality level I'd never hesitate to serve during a fine dinner. (Please note that it needs a few weeks of waking up before serving!)
Excellent fino! pale gold/medium straw color. Wonderful and complex flor/ nuts/ herbal aromas, could enjoy these aromas for hours. Wonderful classic Fino in the mouth, with intriguing salinity. A little short on the finish would be my only complaint. I am a fino lover, and this wines aromas are more complex than most. Wonderful aperitif

(NV Valdespino Fino 'Inocente') A typically pale hue. Full and aromatic, with aromatic herbs and rock salt notes on the nose. Very nicely balanced palate, with a seamless integration of flavour, weight and grip. Nice herby-woody character, with a firm, clean finish. Lovely aperitif.
