Very fresh and accessible when initially poured (opened an hour earlier), this put on weight with more air, but some more earth and tannins also emerged, giving more power but slightly less pure beauty.

Perrot-Minot 2001-2005 Tasting (Chicagoland IL): The rare 2003 that keeps getting better with more cellar time. Roasted meat with intense concentration, all well supported with elegant tannins and clearly enough acidity. Very good length with excellent balance and persistence. If served blind, I would have thought 2002, maybe even 1999. Even better when finished 8 hours after opened. A great wine now, with some possible further upside.

Medium garnet. Enticing nose of cherry, warm blood, pate, and a background note of dried orange peel and hoisin sauce. This glides over the palate with a weightless mouthful of red and dark berries finishing with slight sweetness and mild tannic grip. Paired perfectly with duck breast in red wine reduction. The wine threw some fine sediment so a careful decant is recommended. Excellent.

Ripe black fruit, great concentration. Plenty of elegant tannins, more than enough acidity. Great length, power and persistence. Great now with plenty of life going forward.

Domaine Perrot-Minot Tasting/Dinner with Some Other Great Burgundy from DNS (The Bristol - Chicago IL): Open 3 hours before serving. Served in 03/06/07 flight. Very ripe and fruit-centric but with spice galore. While this seems fat from all the fruit, there is clearly enough structure and balance for this to continue to age gracefully and evolve. My favorite of the flight, admittedly in a "guilty pleasure" sort of way. Group's favorite was the 2006.
