Either I messed up in cellaring this for too long or not in optimal conditions or the bottle was flawed to begin with. In any case, it was heavily oxidized, tasted flawed, and then kind of lost its flavor in the end (we drank it anyway). This is unfortunately the second 2000 Zind-Humbrecht this happened with; the first was a Pinot Gris that we drank at least 10 years ago. We had the other Gwertz some years ago though and it was tremendous.
So, the moral of the story for me might be: Don't age these wines. Drink them soon, when young and fresh, hopefully not flawed.
My wife didn't like it at all, but my odd palette was sort of fascinated by the oxidized quality. Sometimes it's interesting to drink a wine in that state because other qualities come out. However, all in all it would've been better the way it was meant to be!

Cellaraid Discovery Box; 5/19/2017-5/26/2021 (Delivered to Home): Medium amber, with a star brightness. Aromas of cinnamon and honey, and a slight tea-like sense. Sweet and full bodied, with the acids and alcohol seemingly well integrated. Strong flavours of tea leaves, as well as cooked jammy apples and quince, as well as pepper and cinnamon, and walnuts and almonds. Great complexity, and a fair length. Nice!

Opened this tonight with Indian food. Was great wine, great pairing. Lots of tropical fruit, lychee up front. Crazy long finish. Holding up remarkably well at this age.

Looked oxidised, caramel colour, ox nose blew off. Barely drinkable. Poss flawed but marking it down as also could be just well past it.
