Balance of a bottle Coravined last week. This was an amazingly youthful medium golden yellow. The nose evolved radically over a couple hours at various temperatures. At first there was a distinct butter and lemon aroma, then it was like apple cider and even later it was a nutty pear tart. The palate evolved similarly with various citrus, pear and fig layers unraveling over tim. The fig was particularly pronounced on the finish which was very long and slightly saline as well. The acidity was quite bracing at times but always in a good way and food took it to a whole other level, especially the stuffed squash blossoms my wife made. This is a real “wine geek” kind of wine. It grows on you as you taste it slowly over time but it really is quite unique and astounding for a 28 year old dry white wine.

Coravin pour as a test for an upcoming wine dinner. Bright medium dark lemon yellow color, amazingly youthful looking. Nose has lemon confit, light smokey almond or toasted pine nut and baked apple. Bone dry on the palate, still quite tart, lemon and green apple with a long finish. Really I think this needs a good bit more air to fully blossom.

From memory. At Blue Ribbon Bakery Kitchen. I have not had many aged Vouvray, but this was delicious, bright citrus and fresh flower nose, spicy, deep and barely off-dry palate, great finish. Enjoyed with fried chicken.
