Kept at 55F since purchase in 2010. This was very impressive. Mousse remained though lightened up a bit over the years. Went very well with potato chips, creme fraishe, and caviar. Excellent secondary notes coming out with lanolin and beeswax. Acidity still quite present and not as bracing. Residual sugars are there and there is a nice yellow apple and pear quality here. The finish has an interesting complexity and lasts for about 45 seconds. I think this will still get better, if you have the time and did not get one of the ox'ed bottles.

This had only a hint of petillance, and some caramelly notes that said too old. Yet there was an interesting core underneath, a strong acid core, with flavors of ripe apple and honey (and yes, caramel). But I kept returning. B
