'61 La Chapelle (The Square): This has to be one of the best Burgundies I have had. The light rusty colour suggested it was too ancient, but far from it. Aromatic nose. Very pure and intense, but delicate, secondary flavours. Very impressive long and totally delicious finish. exc

Bright, clean, brick/garnet. Broad pale rim, touched with orange. Nose very sulphurous at first, blew off after 20 minutes or so to reveal a rich, fat, nose of smoky bacon, game, very rich blackberries and plums, and touches of leafmould and exotic spices. My notes say "just perfect". Mouth entry is very fresh with good acidity and nice plummy fruit. The mid-palate is quite full-bodied with dense plum and blackberry fruit, real earthiness, and a touch of coffee grounds. Great acidity runs through to a lovely sweet and gamey redcurrant finish. ****

Mature burgundy offline (Rôtisserie Jules, South Kensington): Dark, malty, exotic, floats on the palate, lovely silky texture
