Quite elegant, still fruity but also mature. Ripe yellow apple, orange blossom, some dough, some honey. Quite complex. Medium-fullish palate. Ripe yellow orchard fruit, hints of chocolate. Elegant, balanced and good concentration. Lacking personality, though.

Quite honeyed and rich but still loads of fresh acidity keeping it from being cloying, but it did remind of a blanc de noirs at times. We were amazed it was still so fresh, if we had another we'd keep it in the cellar for another 5+ years or more before returning. Not very yeasty, but a bit of secondary animalistic notes like a rustic honey. Quite good.

(Blind tasting) Full, quite deep, minerally oysterlike nose. Yellow apple, yeast and lightly flowery. Medium-fullish, almost ready palate. Good intensity and balance. Yellow orchard fruit. Dark chocolate and a bit bitter finish. Lacking a bit personality, we didn't have many guesses on this one. Competent, but bland.

2010 Masters of Wine Champagne Tasting (San Francisco, CA): Pale straw color. Small bubbles. Light nose of apple, asian pear, and subtle floral notes. Along much of the same lines for the light-bodied palate: apple, sweet pear, lemon, and light mineral flavors. Very nice, elegant, medium-length finish. Much improvement since my last tasting, but it’s hard to say whether it’s genuine maturation or simply bottle variation.
