so tight on day 1 that we put it away for day 2. the tart cherry fruit is less dense now and taking a back seat to the cedar and iron/iodine/mineral/olive. we put the rest in the gravy. More interesting than enjoyable.
Paired with a Cassoulet (i.e. loads of duck and pork fat to match the tannins). Still young, but already open. Great syrah nose of dark berries, bacon and pepper, but also a note of fresh red currant. Initial red berry sweetness on the palate followed by a structured midle with pepper and a gamey note. Long finish with almost sparklingly fresh acidity. Still present tannins, but already loveøy with hearthy food. Will only better in the next year (slight caveat due to the low level of sulfur). Consumed from magnum.
