  • A really excellent wine, well structured and great balance

  • Wine was 'fine.' Nothing that I would consider distinctive or memorable for the money.
I decanted for two hours and paired with a steak and homemade hamburger… Both pairings worked, but didn't display a unique character different from many other Cali cabs for half the price.

  • A loner bottle in my cellar, it was handy as we were grilling NY strips tonight. Never had a Fairchild before, so why not do a bit of Monday night experimenting.

On the nose, red/purple fruit and a resinous undercurrent...relatively subtle. On this bottle, from auction, some hints of earth and secondary character. To be honest, a bit of meat/game/tomato that initially made me wonder about "cooked".

On the palate, those concerns evaporate. Just beautiful. "Well balanced" is the hallmark of this bottle. Fruit, acid, tannins all in a proportion that sings for my palate. A nice sense of minerality/chalk - in the background but give a nice counterbalance. Based on this bottle, I think another few years (minimum) would be helpful for overall integration, but in the meantime this shows very, very nicely for current consumption.

One of the better bottles I've had recently, but @ $100, I suppose it should be.

  • This has grown up quite well! Complex nose and palate made this a pleasure to drink and was the cab of the night.

  • Decanted, put back in the bottle and taken to the restaurant. Nothing really stands out about this as it appears to still need more time. The tannins still overpower the fruit to such an extent that it seems as though the fruit isn't there. Better than last year, but still needs time.
