For our friend Loek it is always a hell of a job to support decently the extreme cooking qualities of his girlfriend Saskia, but the tries very hard. The Roederer 1979 was a fantastic start combined with some exquisite amuses; really everything in this champagne was in balance, superb mousse, a very ripe but also very lively nose, smooth but with a bite and nearly endless in the finish. One of the best champagnes ever tasted.

Bring it, Big Reds Mini Offline (My House): Nose: Lemons, chalk mineral and some subtle floral attributes. Palate: Lemon attack on the front with the chalk mineral and an elegant medium length finish. A beautiful bubbly.

Bring it Big Reds, Mini Offline (Matt's): Light yellow color. Nose shows prominent yeast, slate/minerality, lemon, citrus and much later opens to some green tree fruits. The palate is bready with core of minerality wrapped around the citrus fruits and follows with a long chalky finish that later softens in hte mouth.
