Double decanted (needed for the sediment) and served about 30 minutes later. The wine has lots of fine sediment so be aware else it will be cloudy. A touch fragile and should be drunk sooner than later. It is however a masterpiece of classic wine, well leathery, mushroom, forest floor. Elegant and the fruit is very much present. The last sips showed the wine is easy to get tired and oxidize but its sill very much a joys wine for the lovers of classic old school Napa. 92-3 and drink NOW.
To Kalon Night at Collyer Catering (Collyer Catering): Popped, decanted and poured. This was everything you hope to get with an aged wine. Aromas of dried cherry, dried blackberry, leather, olive, earth and iron. Fully mature with smooth tannins, it had flavors of leather, dried cherry, earth, mulch and another dark fruit note I could not put my finger on. Ended with a nice 30 second finish. Tried to find out the exact percentage of To Kalon fruit in this but could not find anything. The 89 says it was over 50% To Kalon so I figure that gives me a ballpark for the time period at least.
