Very fine and persistent mousse. On the nose, surprisingly fresh and yeasty with notes of lemon, mineral, etc. Not super complex, mind you, but well-balanced and edgeless, with a good length and a mineral streak that lingering on and on. The cork is still sound. An elegant and lighter style that is similar to Delamotte.
Nice color. On the nose, this shows classy aromas of lemon curd, apricot, toast, and minerals. This is medium light bodied on the palate, with good concentration and excellent finesse. Good finish, that really has serious length and finesse.
whether you seek fruit or yeast, this will impress. fairly muted toasted nose but much fruit and acidity on the front of the palate that has a lot of weight and judicious amt of yeast in the mid palate. great complexity and finish. Great drinking today but it's built for the long term so I'd wait.

When we first pioneered this producer in the US a number of years ago, nobody cared. Since then, Jose Dhondt has gone on to become the "elder statesman" of the boutique grower-Champagne movement and it can be argued that Dhondt's wine is still the very best. Rarely does one find the titillating combination of filigreed mystery and lace-like femininity in Champagne but Dhondt's best bottlings routinely showcase this style and the 2004 is another in a growing line of classics.
I am pressed with this question all the time (and rarely answer it because it is so subjective) but, if I had to pick one Champagne to drink and nothing else, Dhondt would rank right up there. The 2004 is really a stunning effort and the expectations for this producer are so high already that it's hard to believe the wine actually meets them:
