 Tasted by Winetex on 1/28/2010 & rated 92 points: Clear light gold color; Aromas of pear and lime with lemon, pear and chalk flavors. More chalk on the very long, dry and acidic finish. Very dry and wonderful Chablis. I *heart* Chablis. The finish has some sour notes so if this is not your preferred style then don't bother. Thanks Steffen for pointing me at this buy. (516 views)

 Tasted by sehill on 12/21/2009 & rated 92 points: Decanted and poured, this wines begins by showing an austere, rock and mineral driven bouquet and palate. Airing brings out more nuance and depth. The aromatics eventually show minerals, rocks, oyster shell, sea salt, citrus and floral notes. The color is a very light yellow that is youthful and vibrant. The medium bodied palate requires time in the decanter to fully develop. This drinks well now and will improve with a few more years of bottle age. (561 views)
 Tasted by dzop on 12/21/2009 & rated 92 points: Loaded with honey and lemon fruit, both on the nose and in the mouth. This has a very creamy mouthfeel and even a "lush" midpalate, but there's still a firm hit of acidity at the end and the usual "oyster blood" brininess you associate with Chablis. I think stylistically I prefer Fevre, but this is very very good. (631 views)
 Tasted by drwine2001 on 8/1/2009: More 2007 Chablis, Including Fevre Les Clos (Vin Vino, Palo Alto): Third time I've tasted this. Very pretty, floral nose that shows more Sauvignon-like grapefruit as it sees air. Clearly heavier than the Fevre, and more like the Seguinot Bordet in that it has toasty oak on the finish. I much preferred the Fevre today and was surprised at how low the acidity seemed in comparison; maybe this perception was caused by the wood. Like Dauvissats often do, it got better over time.  Tasted by drwine2001 on 6/25/2009: Not quite pale. Some surprisingly sweet, open fruit on both the nose and palate, but then lemon zest took over along with a powerful, mineral finish. Impressive amplitude, very clean finish. This is a big wine that probably has more underlying structure than it showed right out of the bottle. (838 views)
 Tasted by drwine2001 on 3/10/2009: This too has a salty core but is remarkably fragrant, floral, even perfumed with a bit of honey to boot. Slightly weightier than the Petit Chablis but still essentially lean with grapefruit notes. No sweetness here. After it sits on the palate for a few seconds, one is struck by the thought "Who pushed the detonator button??" since it sends out waves of energy that fill the mouth with amazingly intense acidity and minerality. Like a great red Burgundy for having so much flavor yet relatively little weight. Lingering, mouth coating finish of stone dust. Remarkable in several respects, and I'm not sure the La Forest is actually better this year. At this stage, it could accurately be described as painful, which I say admiringly given the potential of this classic young Chablis. (913 views)
 Tasted by Jared on 2/20/2009 & rated 91 points: Back in the saddle again after about a month off and a 2007 Dauvissat PC is not a bad way to get back on the proverbial horse. Very tight at first. So tight that I thought a combo case of wine elbow and swirler's wrist were going to land me as a test study in the New England Journal of Medicine. Eventually, I coaxed out some nice stony notes that were enveloped by honey and lemon zest. Juicy pear and ripe apricot enliven the palate and give a sense of opulence that would seem hard to find in a young Chablis. Creaminess dominates the mid-palate which in turn becomes a nice jolt of acid layered with butterscotch rounding out the satisfying finish. Those Frenchies certainly know their char-do-nnay. 91pts. Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.
