  • Classic Dauvissat with some reductive/oyster shell notes with lime and chalk. Similar on the palate. High acidity. Quite enjoyable.

  • Still very young, bright color with light gold reflections. On the nose lots of ripe yellow fruits, yellow apples, yellow pears, even a bit of candied lime and lemon, and lots more: lots of chalky minerality, oyster shell, subtle spices and earthy nuances of mushrooms. Very complex nose. On the palate a creamy and round texture supported by great acidity and a salty, mineral driven finish. Quite long, and definitely on the riper side for a Chablis 1er cru, showcasing the warm site of Vaillons.

  • What a bottle! Everything was in place and without those annoying reductive/SO2 like notes that I always have here.
    Cristalline, mineral, lemon and lime, chalk. Long finish with the right balance between the acidity and ripeness.

  • Having had plenty of pre-maturely oxidized examples of wines of this era...this one has not bit the dust. Alive and well, complex minerality and salinity, ripe apples, pears and citrus, white flowers, wet stone, with a long and delightful finish. There is a roundness and richness to the wine that only speaks of what proper storage and high quality white burgundy is capable of. If I had more, I'd open them now, now, now. Cheers!

  • Citrus (lemon and grapefruit), pretty salty and slim, a bit unusual for the Vaillons, which is the largest (in terms of richness) of the 1er Crus of Dauvissat. It is the cool and in general underripe year of 2007 which is responsible for this. Drink or hold.
