  • Appearance was straw with great limpidity, youthful looking. Appley and minerally in character with high acidity with perfectly balanced use of malolactic fermentation (butter aroma) and new oak. Good intensity. Classic Chablis.

  • Half way through this bottle, I really don’t know whether to be happy or sad about this great showing tonight. Had to check my CT notes and this is the 6th bottle of 07 Fevre GC I have had (Preuses, Valmur and Bougros) but the very first one that is neither premox nor advanced.

    Pnp. Pale, greyish yellow in the glass, just at the edge of turning into a very light lemon yellow. Might have called this 2017 or perhaps 2014 blind. Still some reduction on the nose. Chalk, a bit of white fruit, citrus. Very clean delineation. Minerality. Does not have the sinewy tension of a 1er Cru but is still lean and almost sharp, and far away from any sort of flabbiness. Very good length. Stunning Chablis.

    If you are lucky enough to open a bottle like this, it is for sure good for 20 more years, unfortunately with Fevre GC of that period, your chances of running into that bottle are more like winning the lottery.

  • Beautiful if quite advanced. Mostly caramel with the primary flavors clearly in the background now. Crisp and smooth. Beautiful.

  • Consistent in it's delivery, this is a top notch Grand Cru Chablis that can go head to head with estates many times its price. Lemon and citrus dominate the nose, with crushed stone and oyster shell on the palate and finish, and some lingering peach notes. There is also the right amount of roundness on the palate to add complexity. At 17 years of age this is going strong, and should keep going for the next decade.

  • William Fevre Chablis Les Presuses 2007
    Nose: Apple, butter, citrus
    Palate: medium bodied, relatively dry, relatively strong minerality
    Rating: 88 pts
    Drink: now - 2032
    Still pretty strong and mainly primary notes. I feel this can last for 10 more years. Tasted together with the 2010. This definitely taste more mature than the 2010.
