  • Fresh with lovely sweet fruit, a creamy mouthfeel and bright minerally acidity. There were notes of baked apple, cinnamon and cloves along with some preserved lemon.

  • A magnum stored in perfect conditions since bottling. Old label, gold, no abv indicated; no back label. Cork almost impossible to remove, eventually it broke and had to be extracted with a corkscrew. There was ample mousse on pouring. The colour is honey gold. Delicious, ethereal scent of creamed mushrooms overlays slightly caramelised ripe fruits. High, poised and a little floral. Nice cushion of mousse on the tongue. The flavour is very powerful, following the nose. Initially mushrooms and pastry, then a slight lull on the midpalate, followed by rounded oranges and grapefruit, with a long lemon-butter finishIntense and uncompromising - qualities for which Bollinger is renowned. Clearly mature, but still vigorous. Intriguing metallic aftertaste develops after a few sips. An acquired taste, I suspect.
