NobleRottersSydney - Tamar Trip Sep04 (3): Stillwater dinner (Stillwater, Launceston): Back to the green-drenched world of Tasmanian cabernet. Stoney (cork) has a menthol and spearmint nose with a herbaceous capsicum streak. Beneath lies some spicy/cedary oak. The wine is cool and somewhat vegetal on the palate, with a fair dose of astringency. The tannins don’t overwhelm, but it wants food. Not much front palate here; the wine sits very much on the middle and back of the tongue.
