  • I had this in lieu of champagne along with some Roquefort cheese on slices of walnut/raisin bread.

    The pairing was fantastic. The 1995 Delice is a dessert wine in the style of a great Sauternes. The wine has matured into a deep gold/light caramel color. The bottle had been sleeping quietly in my passive basement. Although the temps were in the low 60's, I had put the bottle in the fridge the day before. Popped and poured. Cork was in perfect condition. I poured half a bottle into the glass and allowed to warm up a bit. Ripe tropical fruits of pineapple and mangoes and apricots with a touch of golden delicious apples for acidity. The viscosity was like that of maple syrup -- thick, rich. Fantastic and long finish. Amazing evolution from what it was 10 years ago. I would definitely look for this from Phelps in the future. 95+ points, easy.
