I last had this a few years ago and liked it, but it has now truly come into its own. I did not expect to enjoy this as much as I did. The balance of fruit, minerality, spice, and acidity is remarkable. As others have noted it has all the classic Grenache flavors but softened and enhanced by the Cinsault and Syrah. Earlier tastings featured the alcohol, but now it's all in harmony. I wish I had bought more. If you can find it, buy it.

Sabon's 2007 CDP Les Oliver's is at its full maturity, and a marvelous one 14 years after its birth. Elegant and harmonious, perfectely balanced with dried fruit of blackberry, boysenberry and prune complimented by leather, smoke and baking spices. High alcohol subdued by concentrated fruit, smooth and extended finish. Thisbis great CDP.

I underestimated this wine just last night because this CDP of Sabon was reduced. I poured half the bottle into a 375ml bottle and, with even a touch more of oxygenation, I am really enjoying it just one night later for the purity of the black cherry fruit, great balance, smoothness and finish. Moving my score from 89 to 91. I was neutral yesterday, now I like it and think I can even wait on my last bottle to see how the tertiary aroma develop.
