  • Pleasantly developed / mature without any signs of oxidization or undue age. Ripe to overripe tropical fruit, toasted nuts, hazelnut. Some mineral and saline. Low to no acid. Texturally oily. A very fresh and clean example.

  • Remarkably light yellow still showing a glimmer of green. Mature Chablis aromas of honey and truffle, and the Raveneau signature of hazelnut with some background sea shore elements. Enveloping texture, a little vanillin, good but not notable acidity, fantastic length and ending minerality. The most amazing thing was the expansion of the orange fruit as it sat open for several hours. I have had markedly variable experiences with 1998 Chablis (and Raveneau in particular), but this was as exciting a bottle of completely mature Chablis as I've had over the past year or two. Just superb.

  • Splendid aged Chablis drinking at the top of it game. Has some toast, mushroom and honey development. There are notes of lemon, grapefruit, orange and oyster shell and it has the usual Raveneau texture and mouthfeel. There is still excellent cut to the finish and you ae left with a flavour of citrus and butter once the wine is swallowed.

  • Fairly deep color. All truffle and honey. Rich, shockingly low in acidity and low in Chablis character, although some salinity poked its way through. Unfortunately, by that point, oxidation had also become more obvious. Beyond mature. Drink up or even better, call your local auction house.

  • I really enjoy the nose with lemon and mineral notes that you also find on the palate. I'm not a big fan of the very creamy texture. The acidity is there but this somewhat yogurt texture puzzles me and gives an impression of flabbyness. Ok finish.

    (François Raveneau Chablis 1er Cru Vaillons) Bright canary yellow color; lovely tart lime, citrus and mineral nose; a little tight, minerally, tart citrus and lemon palate with a hint of salinity; medium finish
