  开瓶即饮，淡宝石红色，闻香有野肉，樱桃和覆盆子的香气，入口酸度中高，单宁细腻，酒液很咸，咸橄榄一样的口感香气伴随着植物的草本气息和微苦的清凉感，后段有一些辛辣感，余味是轻盈红果和淡淡木质气息香草味。醒酒一个小时后表现更好，植物气息转变出人参一类的香气，红果香气有所增强，多了一份香甜的感觉，一直贯穿到余味，让严肃沉闷的基调变得活泼起来，满口留香。酒体中等，口感纯净的一款酒，不似传统夜圣乔治的强劲，更加内敛和柔和，十多年的发展已经进入最佳适应期。

  All strawberries on the nose. In its primary stage. A little 'fierce and firey' on the palatte. Still quite tannic and sharp. Even from a half bottle, I feel this needs time to soften.

  Impromptu after dinner sip at Table@7. Good dose of air in bottle already.
  Appearance is clear, pale intensity, ruby colour. Legs.
  Nose is clean, medium+ intensity, with aromas of sweet red florals, earth, stony minerality, red cherries, cranberries. Developing.
  On the palate, dry, high acidity, medium alcohol (13%), supple medium-
  tannins, medium- body. Medium flavour intensity, with flavours of red cherries, cranberries, earth, sweet oak spices, stony minerality. Medium finish.
  Very good quality. Could be said to be lacking structure and depth. But what I like here is the effortless elegance and floral nose. Very transparent and ready for an enjoyable drink as most 2007s 1er and below Burgs are. Don't expect this to improve much more than tops 4-5 years more.
