Fruity, bright, medium bodied, no heat. Very Grenache in profile with some darker fruits and a little rubber. Bright for an 07. Simple, pleasant, ready. 86-87 pts.

I have been taking a glass through the coravin here and there over the last week or so while preparing dinner. The palate is berries, plums, tobacco and a touch of coffee which came out in the finish. Drinking very nicely at 15 years of age.

Drinking nicely at 15 years of age. Opened two hours prior to dinner. Part of the bottle was used for cooking - a veal mushroom and crushed tomato dish. The nose was all fruit. The palate was berries, plums, tobacco and a touch of wood which came out in the finish.

2007 Domaine Gauby Vieilles Vignes was layered, savoury and elegant. The maturing Roussillon red was clear and medium garnet in colour with loads of fine sediments. It took two hours of in-bottle aeration to open beautiful bouquet of raspberry, kirsch, garrique, liqourice, truffle and crushed rocks. Underneath were enhancing brett notes of dark chocolate, smoked meat and bacon fat.
On the palate, it was dry and rather full-bodied, well-framed by medium level of integrating tannin and medium-high level of balancing acidity. Flavours of ripe red cherry, black pepper spices, light roasted coffee and wet stone minerals persisted in a long savoury finish. The alcohol level was at 13.5%.
The blend was composed of 25% Grenache, 35% Carignan, 30% Syrah and 10% Mourvèdre. The old vines were grown on limestone slopes overlooking the Mediterranean sea. The wine was aged in mostly used oak barrels for two years.
