A lot of spice in addition to delicious fruits. Taste builds very quickly and then fades gradually over a minute or so. I can see how those who are very sensitive to heat in a pinot would be put off by this wine...but overall we were smitten by our first experience with an Aubert pinot. Nutmeg and assorted spices on nose with a good amount of darker fruit. After tasting through the wines single blind, this was a disappointment. After exposure to air for about an hour, it really showed well and scored on the high end of my initial range. Nice acid on the palate. Licorice and well integrated oak. Initial bitterness gave way to nice balanced fruit. Good concentration and weight. A nip on the finish, which is holding this back. Light purple, more plum than cherry, and reminiscent in that regard of some of the Moulin Rouge that Mark made at PM, though a little lighter. Complex spicebox nose, with some leather and strawberry. Promiment and somewhat unique strawberry palate, with a lot of depth, a long finish, and without the heat that a lot of quality pinots from California have these days. Pinot Noir is the Noble red grape of Burgundy, capable of ripening in a cooler climate, which Cabernet Sauvignon and Merlot will not reliably do. It is unpredictable and difficult both to grow and to vinify, but results in some of the finest reds in the world. It is believed to have been selected from wild vines two thousand years ago. It is also used in the production of champagne. In fact, more Pinot Noir goes into Champagne than is used in all of the Cote d'Or! It is also grown in Alsace, Germany, the U.S., Canada, Australia, New Zealand, Croatia, Serbia, Italy, and so forth, with varying degrees of success.
