Opened on Thursday for lunch, this note is from Sunday evening, fully 3 days later, just kept in the fridge with the cork in. Wow, is this holding up fabulously, has the trademark Ceritas richness, though some of that has been tamed as the days go by, wonderful acidity and overall balance, lovely, complex flavors, nothing ripe or out of place, even some hints of minerality on the finish. Terrific wine. Maybe I'm dreaming, but this could be a top vintage Chablis Preuses, which tends to be a richer vineyard.
Light gold. Sweet subtle nose. Lemon/citrus, saline, ocean spray, chablis, integrated, no oak evident, balanced, slight acid bite. This is just lovely and went so well with seafood. It has years left in it. No hurry to drink what you have, but certainly ready for consumption. Mine have perfect provenance and would say easily lasting to 2019, not necessarily improving materially though. What an incredible effort from John and Phoebe and her parents vineyard.
This wine is developing superbly, and it is just starting to show some secondary characteristics of honey and wax. Despite this richness, the palate still has riveting acidity and tremendous freshness. There is an interesting almost saline note that develops on the finish as the wine warms up a bit. Drink or hold, you can't go wrong.
Popped and poured to accompany Dover sole. White gold hue with slightly honeyed cast. Nose of freshly cut hay, apple core, grapefruit, white stones. Nicely wrought mineral spine with sharply cut layers of peach, granny apple, lemon, and lime. Towards the end of the evening the cut and focus fell off a bit. Very good acidity and moderately long finish of lemon and flint. Very good but this bottle was perhaps a tiny bit past peak.
