Opened hour before serving last night. big fruit but lovely w steak. Gassed. Tonight green pepper and vanilla nose. Fruit settled - minimal alcohol. Would it have been like this if we had opened earlier?

Ordered direct from winery & cellared since. Decanted for 60 minutes. Fully mature but not over the hill. No funk which surprised me. Tannins are soft & fully resolved. Red fruit with spice, earth & typical Cayuse salinity. I’m not a huge fan of Cayuse’s Bordeaux blends as they aren’t Bordeaux & aren’t California Cabs. But, these are enjoyable & different.

Really great stuff in a very good spot right now. I waited to long from memory last week but bits of the conversation drinking it revolved around a sweet purple bloody nose and earthy iron red fruits.

(Cayuse Vineyards Flying Pig Red Wine Walla Walla Valley) A classic Cabernet Franc and Merlot profile with floral notes, herbal notes, and red fruit – more fruit than seen in most of the Cayuse wines. An incredibly textured feel to the palate with huge minerality, silky tannins, and a saline quality. A wine that stays with you long after the last sip. 60% Cabernet Franc, 40% Merlot. En Cerise Vineyard. 231 cases produced.
(Cayuse Vineyards Flying Pig Barrel Sample Walla Walla Valley) Rich and intense. Seemingly lower alcohol and higher acidity than recent vintages. Doesn’t quite have the weight on the palate at present but should fill out. A lot of earth aromas and flavors with a laser-like intensity of fruit. 60% Cabernet Franc, 40% Merlot. 14.2% alcohol. To be released in 2010.
