The nose is very nuanced and full of barn, tar and oak. There is also some lovely raspberry and liqorice.
The palate is so balanced! It feels elegant with it's nice acids and tannines, wich are long without becoming irritant.

We drank the wine directly after opening and it was the correct choice. It went very well with fillet of beef and a potato gratin.

This wine is my best so far. The reason for this is the balanced and long taste and the nuanced lovely stable nose. I will buy one more bottle and store it for many years. (190 views)

 Tasted by Finare Vinare on 12/24/2009 & rated 94 points: Initially a bit bretty on the nose, with shrimp shells and barnyard, it quickly opens up to extremely elegant nebbiolo perfumes. On the palate Pajé is pure, fruity, tarry, long - and dry. Incredibly fresh acids and very smooth tannins performs an act of balance equal to great burgundies. Heaps of minerals shine through and makes for a highly refreshing drinking experience. This is one of 2009's most memorable wines. (678 views)
 Tasted by il_diavolo on 12/9/2009 & rated 93 points: (from 375) this is a fantastic wine given the hot vintage. slight loss of colour with some orange bricking already. no decanting needed, straight off the bat has intoxicating nebbiolo perfume. balanced and powerful and little tannins - a little smokey but I dont mind that in barbaresco. long finish (691 views)

Giù il cappello di fronte a questo giovane produttore che non attua compromessi e va diritto per la sua strada , ecco un confortante esempio di giovani leve langarole. La visita comincia dalla vigna (bonus) dove si pratica l'inerbimento e si cerca di mantenere il più possibile inalterato l' ecosistema vigna. Le vigne sono piuttosto vecchie e ottenute da selezione massale. La macerazione sulle bucce dura , a seconda delle annate , un centinaio di giorni e si usa la tecnica del cappello sommerso con steccatura. Tecnica piuttosto "arcaica" ma a quanto pare piuttosto efficace. Gli affinamenti in botti grandi e qualche barrique "scarica" è lunghissimo e alcuni vini escono anche dopo 10 anni.
