  • The wine was pristine. Rich yellow color. Buttermilk scent blew off quickly. This Les Clos was mineral driven and a touch floral, with nice, taut acid, and oyster shell. This was not particularly ripe, but there was lemon peel, and it still had a grand cru level of volume, body, and a little bit of creaminess. excellent if you can avoid the flaws so many other tasters seem to be running across.

  • From 375. Color looked great with a light golden color. Rather advanced flavor profile with strong almond profile on the nose and palate. Browned butter flavor finish. Never had a comparably aged chablis—but didn’t enjoy this but not sure it’s correct.

  • Excellent, pale gold colour. Rich, honeyed, wet wool. Ouster shell comes out on the mid palate. Bit of heat in the finish. Definitely not outshined by the raveneau tonight.

  • Tasted double blind. Oh boy, this could have been so great if it wouldn‘t be for the strange premox (?) nose. Less detectable on the palate, this is impressively structured and with lots of substance and beautiful minerality core. If it wouldn‘t be for the faulty notes, this could be a 95+ wine. We had this next to the 2014, which was not clean either. Overall disappointing performance from Fevre.

    TN: Very intense, over the hill nose. Not outright oxidative but lots of strange hay aromas mixed with oxidation notes. On the palate much better and cleaner. This has massive substance, so dense and deep with lots of fine lemon, citrus, baked apple, lots of crushed rocks, limrestone and a wonderful, long, intense, citrus and minerality-driven finish. High acidity, very round and with good sharpness.

    Decanting: Not decanted, followed over three hours with little change. I don‘t think more air would have changed things. I don‘t think this usually needs a long decant.

  • Pretty oxidized, hard to say whether premox or just well past its day… This was an auction bottle hence not sure how this was cellared. Cork looked intact, fill level was perfect and there were no other signs of flaws. The nose was mostly nutty with some caramel notes, reminding me of an aged Champagne. Palate was still ok with nice acidity and a marginally creamy texture. But aromatically it felt not entirely clean with a lingering aftertaste arising from the ox notes. This was served next to the 2014 and hence a shame we couldn’t do a proper comparison.

    (Domaine William Fèvre Chablis Grand Cru Les Clos) Light yellow color; very creamy, lemon chiffon nose, with a tangy lime note; elegant, but a little austere initially compared to the Les Preuses, bright lemon palate with depth, minerals and a fresh oyster note mid-palate; opened up a lot with air time in the glass, with even more minerality and a sense of mussels showing up; medium-plus finish 94+ pts.

    (Domaine William Fèvre Chablis Grand Cru Les Clos) Light yellow color with greenish tinge; light, ethereal citrus nose; very tasty, focused, if not intense, elegant, citrus and mineral palate, rich but balanced; medium-plus finish (WOTF)

    (Fevre William Chablis Le Clos) Pale lemon yellow. The nose starts subdued giving high toned floral aromas, faint green apple and mild peach. With time the peach component becomes stronger. The palate has the hallmarks of great Chablis - purity, just a little trace of fat and a superb length. I felt that maybe a shade more acidity would provide an even better wine, but not enough to stop me ordering half a case for future reference(!) A stealth wine that creeps up on you getting better and better in the glass.
