This has aged beautifully and mellowed significantly. The formerly dominant acidity has now integrated with the other elements to form a less vibrant, but more interesting, wine. A beautiful expression of riesling.

(Herman J. Wiemer Dry Riesling) #5; COLOR-medium golden; NOSE-honey, honey dew; apples; so complex and fresh; acacia flowers; a beautiful nose; PALATE-good quality; but a little too little acidity for my palate; the fruit is voluptuous and does finish with some acidity on the finish; has almost dessert wine weight, but is not sweet; this really coats my palate; this is very well made and structured; but many would love this; W&S-93; GV-91
(Hermann J. Wiemer Riesling Dry Finger Lakes) Erupts with classic Finger Lakes character -- bright lime, Kaffir lime leaf, lemon zest and grapefruit aromas with an undercurrent of wet slate minerality. In a mouth-watering, Kabinett style, the palate is dry (.8% RS) with electric acidity that is both balanced and integrated. Lime flavors drive the palate with white grapefruit and slightly less minerality than the nose might indicate. There is also a distinct flavor that reminds me of the candy shell on sugar-coated almonds. This wine shows great length and has a bright-but-smooth finish, begging for another sip -- as well as a place on the lunch or dinner table.
