Superb Cabernet. Was worried given high alcohol content but it had plenty of layers and a long finish. Has that Spring Mountain complexity along with big fruit. Drinking well right now but could go longer. Decanted 2+ hours and drank over another hour. Got better and better. Held up to a filet loin with port sauce. Tannins were there but not overpowering.
Drinking nicely but still has some time left. Nose is mocha, saddle leather and black olive. Tastes of currant, cassis and black cherry with a long slightly smoky finish. Medium tannins. Still evolving but very nice now...in a good window between youthful and aged. Could have waited but glad I didn't.
A wonderful cabernet sauvignon! Opened and decanted for about 30 minutes. On the open, the nose was filled with fruit, pepper and some leather. Glorious sensory perceptions on the palate. Our first Hidden Ridge cab.
