In great shape. Tawny color. Bone dry with dancing acidity. Burnt caramel, tobacco, vanilla, dried fruits on nose and palate. Finesseful and with almost exciting complexity and wonderful persistence. A real eye-opener for our guests not familiar with the wonders of sherry. Sadly, my last of these.

Brown sugar, raisins, dried apple in nose with nutty notes of caramel and cassis. Dry with more nuts and a little bitterness on the palate, and a long finish.

[30yo VORS] Medium brown, a little cloudy; complex rich nose, sometimes marzipan among other high volatile notes, intense nuttiness but a sweet/savouriness like apple crumble; the shape of the palate is extraordinary: smooth, bass and treble - low deep nut/oak character with a lift from the powerful acidic/oxidation streak; long in the sense that it's the front, sides of the tongue and front roof of the mouth which experience the length most. It was a fantastic match for chorizo and meatball-based tapas!
