  • The wire-cage (muselet) cracked to bits when torn apart and the cork gently slid out without any fizz, resembling stony wooden moor-oak. Cloudy amber colour, glowing at times, no more perlage but the pure, primary cuvée’s assemblage. High end sherry on the nose, albeit not maderised at all, whiff of honey and pineapple, walnuts and lardy, waxy bits with roast brioche, still intense. On the palate subtle sour lemon zest, black chocolate nuggets, lovely acidity and structure, decent weight, and remarkably complex with a spicy but fading finish. For if you like ‘tasting history’ this lifts one’s senses and spirit to new heights, in awe. Quelle émotion! (95P)
