HdR Opening Tasting: Again, another Pax wine that has really improved with age. I keep underestimating these wines. Cooler profile. Black raspberries. Complex. Delicious. In a great place.

My oldest Wind Gap, I was very curious to try it. A bit disjointed at first, this improved with a few hours of air and showed a nice quintessential Syrah bouquet of herbs, meat, black olives and some caramelized oaky notes. Bright, lemony and nice to taste with a pleasing silkiness, but fairly one dimensional. Should hold but unlikely to improve.

Dark purple color, opaque but for the rim. Nose of ripe raspberry, a little ETOH. Palate tends toward sweet with alcohol and tartness to balance. Full bodied with a long finish. Drinking well now, better than I recall the last bottle. May be some more life to this, but what's the point. Not likely to improve further so enjoy now.
