Beautiful wine right now. Thick and golden with flavors of honey, straw, and pears. Well into secondary flavors now. Mousse is diminished but still adequate.

Drank as an aperitif before dinner at Le Bozerotte. Compared to the 2007 Prestige. Usually the 2004 has been a richer more flavorful vintage in comparison to the leaner more crisp 2007. Unfortunately this bottle of 2007 was flawed. It is the first Parigot I have had with a flaw. It wasn't the typical TCA but rather a faint old feet smell. This night the 2007 won out! Typical apple, nuts, hay, yeasty and rich. Normal a rating of 91.

Parigot ages so well at 9 years old it has developed honey, toast, crisp acidity and good fruit. Super fresh way to start the night.

Colour: Watery golden colour. Nearly no bubbles left.
Nose: Honey, peach, a hint of pear.
Palate: Low acidity, lack of tension & acid. Short finish.
Maybe we had a bad bottle or this is just not my wine.
