NobleRottersSydney - aging Riesling (360 Bar & Dining, Sydney): {screwcap, 11.5%} [Aaron] Steely and glasslike. This seemed quite shut-down, on nose and palate; ticks all the ‘medium’ boxes for structure and offers only tangy lime flavour at the moment. Still has a granite/rocky texture. Trocken Kabinett with an Oz accent. Feels a bit on the cusp of blooming into something wonderful. Dry, promising. Five more years should work.

Very dry, steely, limey riesling. Nice on the nose with melon and hints of acacia honey. Tight, tart, high acidity and minerality. There's a subtle hint of smokiness at the finish, with a burnt bruleé. A perfect pairing for lobster or japanese hairy crab.

Lighter body, with loads of acid. Citrus, some petrol, and an almost grassy/green component. Nice wine, maybe a touch out of balance, but great with food.

Petrol and citrus, some say elegant wine pairs well with oysters.
