Opened 24 hours prior to service. Still very youthful. Beautiful freshness and classic display of Chateau Châlon. Best to either open this 3 or 4 days as slow ox before serving or wait another 10 or 20 years or both!

Eight decades of Château-Chalon (back to 1934) with Jean-Francois Bourdy: A "very great" vintage. This offered lots of pine richness on the nose. Spicy, with some minerals as well. Chunky texture on palate entry and a little light in flavor. Some lemon, but quite lean. Voluminous acid on the finish that I like quite a lot. It's rich and smooth, with nice freshness.
