Opened and decanted through VinAire to find an overwhelmingly chocolate, full bodied taste, to the point where I wondered what on earth could stand up to it. Corked with Vacuvin and on day 2 the beast had settled and it was.....really nice. Fully integrated fruit core with ripe (but not overripe) cherries, blackberries and a hint of vanilla. Tannins were smoothed out. Delicious, and much better than I expected. Drink up if you still have this, it’s in a really nice spot but might have a good 2-3 years left. (1231 views)

This bottle, even though it was 5 years old was very solid, dark in red color with great depth and texture and very fresh. This may have another 5-7 years to age. I should check with WTSO and see if they have any more. (1394 views)
 Tasted by Dale Rattles on 6/21/2017 & rated 89 points: Interesting bottle. Absolutely closed upon opening, we recorked and put back in the wine fridge after giving it a few hours of air. Day 2 found it Bordeaux-like, with muted fruit and a short finish, but pleasant. Recorked again and finished the last half bottle on day 3, when it started to shine. Much more depth and complexity. Still not "amazing" but quite good on day 3. Will let this sit at least a year before I try again. Rating is based on a combination of days 2 and 3 (88 and 90 respectively). (1759 views)
 Tasted by kevrob822 on 4/12/2017 & rated 89 points: Very nice. Excellent color, aroma and taste. Everything came together and it was just so rich, dry & powerful. I had this bottle with a very simple, but solid, grilled smoked gouda burger. It was a great pairing.

I'd give this 89 points and a Very Good QPR. Get more without question. I'm new to CT, so my previous reviews were in another location, but this is actually my 6th bottle of this wine and they've all been very solid and very consistent. And to be fair, I believe my scores to be 1-4 points lower than most. Which looking at the other scores on this wine/vintage pans out. (1829 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
