 Tasted by hoservin on 7/15/2023 & rated 95 points: Decanted for one hour. Nose of blackberry, currant, mocha and forest floor. Black fruit, mocha, spice, forest floor and crushed rock on the palate. Very long, layered finish. Full bodied. Served with reverse seared strip steaks with red wine sauce. (370 views)
 Tasted by RockinCabs on 7/3/2023 & rated 95 points: Nose: Voluminous blueberry, cassis, cigar wrapper and pencil/graphite. As it opened some spice was added and the black fruit grew in depth on the nose. This was unique on the nose, and did not have any overripe tendencies despite the extraction.

Palate: Deepest black berry, cassis and charcoal notes of the group. There is a really nice pencil/graphite and wet rock note in the mid-plalate and just a bit of an herb note coming out. Still has some angular edges and the most vertical structure of the three.

Finish: Give a slightly more robust impression, and strays away from the perfumed and silky notes. Strapping tannin in the back palate and finish still here.

The third BTK wine in our lineup, and this showed extremely well. On the second day the tannin had gotten a bit hard. Still requiring time to integrate and mellow, no rush on this, but will the tannin outlive the fruit? (589 views)

 Tasted by Red Sox Fan on 7/4/2021 & rated 94 points: The 2010 Tor To-Kalon Cabernet evolved through several phases in the course of an evening: unstructured and jammy with blue-black fruit after a one hour decant, then an hour or so later turning savory with diminished fruit (on the red spectrum now) an hour, and then by hour three filling out into a nicely balanced napa cab that was back to the blue spectrum with both ample fruit, good structure and a strong finish. An interesting experience but next time I’m going to try to skip the first two phases with a three hour decant. (1000 views)

Found no solids which suggests it was filtered at the winery. Very full flavored with energy, red berries and spice. It's hard to describe just how wonderful this was. The only thing one might quibble with the aftertaste. Otherwise, it was almost perfect. This was a perfect companion to a fine, thick strip steak. (882 views)

Palate follows a rich dense spice sweet black fruit driven wine. Still very young, yet well put together and quite rich.

Nose that’s dark and brooding, maybe offering up blackberry and a little sweet vanilla bean, but on the palate it is all cassis, plum, violet. No savory flavors at this point, but polished tannins, appropriate acidity, great length. It’s a beautiful cab. I understand AG’s comment if “lack of place” - but this is a beautiful, big (and not at all “heavy”) Cali cab, it tastes like it, and it shouldn’t be down-graded because it doesn’t scream To Kalon - that’s a crazy! It’s still too young - 9 years in already but I wouldn’t check in on it again for another 4 (if I had any more ...) (1227 views)

Nothing overblown or missing -- it's a wine that can fool you into drinking like a quaffer but swirl and savor in your mouth and oh my! It is so smooth, so deep, so many flavors... 5 hour decant. Not quite perfection for my taste as the nose was not as fragrant as possible but a wonderful experience. (1320 views)

For a 2010 at this price point, I expected so much more. The first half of the taste showed so much promise with a delicious, fruit forward, balanced taste. 2010 marked our winery’s 10th anniversary. To celebrate I asked (winemaker) Jeff (Ames) to craft an “anniversary” wine, which he did brilliantly. Cheers. (Tor Kenward)
Winemaking
The 2010 To Kalon Cabernet proved again that my job as winemaker is to just get out of the way of this world class fruit. In 2010 we did little thinning in the vineyard yet still got under 2.5 tons/acre of beautifully ripe fruit. This was hand sorted and destemmed to a closed top tank where it got 3 pump overs a day until 4 days prior to finishing fermentation (which lasted 18 days) when it was backed down to 1 a day. This was barreled down to a combination of 90% new Darnajou and Taransaud barrels and bottled un-fined and un-filtered 18 months later.
Winemaker’s Tasting Notes
Wow. With the 2010 Anniversary Cuvée Cabernet you get a wine that lacks nothing and needs nothing. For me, this may take over as my favorite To Kalon Cabernet. The aromatics on this are floral and bright with a great mix of red and black fruits as well as a meaty, earthy side to them. On the palate this is silky and seamless while at the same time extremely rich and dense. An amazing combination of power and elegance. The upside on this wine is that with a good cellar it is almost unlimited, but it should be amazing on release as well.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

Beckstoffer To Kalon Vineyard

Beckstoffer To Kalon continues to receive worldwide accolades for its wines, particularly in the last decade. The vineyard is on a gentle slope on the western foothills of the Oakville appellation. Soils are Bale loam/Bale clay loam, and are impeccably farmed by Andy Beckstoffer’s team. We have a by-acre contract so we can determine canopy, crop load and picking dates – but rely on the Beckstoffer viticulturists for insight into this unique vineyard to guide our decisions. ... ©2012 Tor Kenward Family Wines
